We are proud to stock two delicious certified organic types of cheese from Kootenay Alpine Cheese Co. located right in the heart of the Kootenays. They use no pesticides, chemicals, GMO's or hormones.
Alpindon - Premium reserve cheese, a firm cheese carefully modeled after French Beaufort d'Alpage. Following century's old tradition this cheese is hand-rubbed and made only with milk from summer pastures. It exhibits a smooth nut flavor, a complex finish a rich golden interior and a dark textured rind.
Nostrala - A firm cheese with mild earthy notes, a subtle creamy texture, and a pale golden interior. It resembles a firmer Italian Fontina, often referred to ads the Italian cousin of French Gruyere.
Both of these types of cheese are made with whole raw, organic cow milk.
The folks at Kootenay Alpine Cheese cut wedges of cheese for our baskets at approximate sizes of 150gr - 200g. Larger sizes are available but we would require some notice.
